These vineyards are located on the Mas Lluet, Can Planes d’En Perull and Les Cunilleres estates, all in Castellví de la Marca and at different altitudes in different areas of the municipality. Grown on dry, gravel-rich soils, the grapes are tended organically, and harvested manually. They undergo a gentle pressing to obtain the grape juice. First fermentation is for 15 days in stainless steel tanks. Second fermentation takes place in bottle thanks to yeast collected from a pied de cuve from
Xavier's fields, and followed by at least 12 months of maturing on racks. Brut Nature is an easy-drinking, not-too-dry Cava with hints of apple, anise, brioche, and citrus. Good fizz on a soft finish. Pair with shellfish, appetizers, cheese, and cured meats.
