Ezio Cerruti 'RiFol' Moscato Pet-Nat
ABOUT: Ezio's winery lies in the heart of Piemonte in a town called Castiglione Tinella. In this part of Piemonte Nebbiolo takes a backseat to Moscato. While most producers here make wine in large quantities and in an industrialized fashion, Ezio, being the rebel he is, chooses to make wines his own way. That means dry wines, made with Biodynamically grown grapes in small batches, and no use of yeasts or other additives.
VINEYARD: The vines are up to 60 years old and planted on steep hillsides at around 1,300 feet of elevation. The soils are mainly clay with small amounts of limestone. Ezio's vineyards stand out in the area because of how green and lush they remain when all his neighbors sites have turned to brown. Wildflowers and native grasses grow in between the vines to promote biodiversity and to provide vital nutrients to the soil.
WINEMAKING: The Moscato begins fermentation in concrete, before being put into bottle with some grape must he has kept aside since the harvest. The wine is refermented in bottle and there is no disgorgement, making for a vibrant col fondo with gorgeous aromatics, gentle bubbles and dry, chalky finish.
